SPEAKERS

Monique Soileau-Burke (Ice Queens) is a pediatrician by trade and snowball shop owner by choice.  Growing up in southwest Louisiana, she consumed many New Orleans style cherry snoballs and couldn’t wait to replicate the flavors in Baltimore.  A graduate of Tulane University and Tulane University Medical School, Monique moved to Baltimore in 1999 to complete her pediatric residency at the Johns Hopkins School of Medicine.  She has been a partner in practice at The Pediatric Center in Columbia, MD, since 2002, where she cared for her current Ice Queens business partner, Dasia Kabia.  Monique lives in Locust Point with her husband and daughter.  She enjoys running, traveling, and working at Ice Queens.

Dasia Kabia (Ice Queens) is a culinary graduate of Western Tech High School and was a lifelong resident of Baltimore County before moving to Baltimore City earlier this year. She has been an entrepreneur since elementary school:  selling blondies from her book bag, reselling donuts from Shoppers, and dreaming of opening her own snowball shop. Her dream cam true in 2020 when she partnered with her former pediatrician, Monique Burke, to open Ice Queens. Food is Dasia’s love language and she can frequently be found cooking up unique creations for her friends and family. Dasia enjoys traveling, spending time with her family, and creating new sweet treats for Ice Queens…living every day to its fullest.

Ann Costlow (Sofi's Crepes) is the founder and owner of Sofi’s Crepes which has multiple locations throughout Maryland. Ann had been a Stockbroker for 16 years and took a three month leave of absence to be a galley cook on a tall ship, The Pride of Baltimore II. When she returned, there was no going back to corporate life, so she ventured out to open something on her own. She had spent some time in Paris and decided that crepes would be her concept. Delicious and not that complicated, so that is where it all began.  She named it Sofi’s Crepes after her loyal pup of 11 years. Ann studied the art of crepes by visiting creperies all over Brittany and Paris. She took classes at La Cordon Blue cooking school in Paris. Sofi’s is now franchised with multiple locations throughout Maryland. When asked if she ever misses finance, she says she has never looked back.
